Like most strong Austrian blondes, Schloss is beautiful to behold. And like many exceptional cheeses, it is pungent enough that you get a sense of the cows’ diet before you bite in. Once you do, the flavorful cream of Schoss will convince you it was worth the drive through Marin to The Cheese Factory, the only source of domestic Schloss available.
If you visit for the cheese, then stay for the art, though there are many who do it the other way around. Art at the Cheese Factory is the perfect combination of two of life’s most stimulating and rewarding pleasures.
